Algiinaattimolekyylejä, commonly referred to as alginates, are a group of unbranched polysaccharide polymers found in the cell walls of brown algae. These natural polymers are primarily composed of repeating units of beta-D-mannuronic acid and alpha-L-guluronic acid linked by beta-(1→4) glycosidic bonds. The ratio and arrangement of these two uronic acid monomers vary depending on the algal species and environmental conditions, which in turn influences the physical and chemical properties of the alginate.

Alginates are characterized by their ability to form gels in the presence of divalent cations, most notably calcium ions. This cross-linking process occurs through an ion-exchange mechanism where calcium ions bridge the carboxyl groups of the uronic acid residues, forming a three-dimensional network. This gelling property makes alginates highly valuable in a wide range of applications.

In the food industry, alginates are widely used as thickening agents, stabilizers, and gelling agents in products such as desserts, sauces, and dairy products. Their ability to form stable gels and encapsulate liquids is exploited in molecular gastronomy and in the creation of artificial caviar. In the pharmaceutical and biomedical fields, alginates are utilized for drug delivery systems, wound dressings, and tissue engineering scaffolds due to their biocompatibility and biodegradability. They can also be used to create microcapsules for encapsulating sensitive therapeutic agents. Furthermore, alginates find applications in the textile industry for printing and dyeing, and in agriculture as soil conditioners. The extraction of alginates typically involves treating brown algae with alkaline solutions to dissolve the polymers, followed by precipitation with acid.
