Xanthanová
Xanthanová is the Czech feminine adjective form of xanthan. Xanthan is a polysaccharide produced by the fermentation of the bacterium Xanthomonas campestris. It is commonly used as a food additive, where it functions as a thickener and stabilizer. Its ability to hold liquids, prevent separation, and create a stable emulsion makes it valuable in a wide range of products, including salad dressings, sauces, baked goods, and dairy alternatives. Xanthan is also found in non-food applications, such as in cosmetics and industrial products. It is soluble in water and forms a viscous solution. The production process involves growing Xanthomonas campestris in a controlled environment with a nutrient-rich medium, followed by extraction and purification of the xanthan gum. Its effectiveness at low concentrations and its ability to maintain viscosity over a range of temperatures and pH levels contribute to its widespread use.
