Viljainfusioonid, also known as grain infusions, are a culinary technique involving the steeping of grains, such as barley, rice, or wheat, in a liquid to impart their flavor and aroma. This process is commonly used in the production of alcoholic beverages, particularly beer and whiskey, where the grains are steeped in hot water to extract fermentable sugars and characteristic flavors.

In beer brewing, a process called mashing involves steeping malted barley in hot water. This activates enzymes within the malt that convert starches into sugars, which are then fermented by yeast to produce alcohol. Different types of grains and varying steeping times and temperatures can contribute a wide range of flavors and colors to the final beer.

Beyond alcoholic beverages, grain infusions can be employed in non-alcoholic applications. For instance, roasted barley can be steeped in water to create a coffee-like beverage. Rice can be infused in milk or water to create a subtle nutty flavor for porridges or desserts. The principle remains the same: extracting desirable characteristics from the grain into the liquid medium through a controlled steeping process. The success of a grain infusion often depends on the quality of the grain, the temperature of the liquid, and the duration of the infusion.
