Viiniviljely, also known as viticulture, is the cultivation and harvesting of grapes. This ancient practice is primarily focused on producing wine, but grapes are also consumed fresh, dried as raisins, or used for juice and other products. Climate plays a crucial role in grape growing. Grapes require a sufficient amount of sunshine and warmth during the growing season, but extreme heat or cold can be detrimental. The amount of rainfall is also important, with too little requiring irrigation and too much potentially leading to disease. Soil composition influences the vine's nutrient uptake and water drainage, with many premium wine regions characterized by well-drained, mineral-rich soils. Topography, such as the slope of a vineyard, can affect sun exposure and frost risk.

The cultivation process involves planting grapevines, typically from cuttings or grafted plants, and managing their growth through pruning, trellising, and pest and disease control. Pruning is essential for controlling yield and shaping the vine for optimal fruit production. Trellising systems support the vines and improve air circulation and light penetration. Harvesting, when the grapes reach their desired ripeness, is a critical step that directly impacts the quality of the final product. Different grape varieties have distinct growing requirements and are suited to specific climates and soil conditions.
