Umbukhu

Umbukhu is a traditional African dish, particularly popular in Botswana and parts of South Africa. It is a type of steamed pudding or savory cake, often made with maize meal. The preparation typically involves mixing maize meal with water to form a thick batter, which is then seasoned with salt. Sometimes, other ingredients like beef fat, onions, or even meat pieces are added to enhance the flavor and texture.

The mixture is then carefully wrapped, traditionally in dried sorghum leaves (named "mushushlo" in Setswana) or sometimes in banana leaves or aluminum foil. This wrapping helps to hold the shape and prevent the umbukhu from disintegrating during cooking. The wrapped parcels are then placed in a pot of boiling water and steamed for a significant amount of time, usually several hours, until the umbukhu is firm and cooked through.
