UHT käsitellyssä refers to a food product that has undergone Ultra-High Temperature (UHT) processing. This is a method of pasteurization where the food is heated to a very high temperature for a very short period, typically 135-150 degrees Celsius (275-302 degrees Fahrenheit) for 1-2 seconds. The primary purpose of UHT processing is to kill microorganisms, including bacteria, spores, and yeasts, that can cause spoilage or illness. This process extends the shelf life of the product significantly compared to traditional pasteurization methods.

Products commonly UHT treated include milk, cream, and juices. Because of the rapid heating and cooling, the nutritional value and flavor of UHT-treated products are generally well-preserved, although some minor changes in vitamin content can occur. A key benefit of UHT processing is that it allows for the product to be stored at room temperature for extended periods before opening, as long as it is packaged in sterile, airtight containers. Once opened, however, UHT-treated products typically require refrigeration and should be consumed within a few days, similar to conventionally pasteurized products. The absence of spoilage microorganisms is what allows for this extended shelf life at ambient temperatures.
