Tärkkelysketjuun, often translated as starch chain or starch molecule, refers to the fundamental structure of starch. Starch is a complex carbohydrate composed of numerous glucose units linked together. These glucose units form long chains, and the way they are connected dictates the properties and types of starch.

There are two primary types of starch chains: amylose and amylopectin. Amylose consists of linear chains of glucose units connected by alpha-1,4 glycosidic bonds. This linear structure allows amylose molecules to pack together in a helical or coiled fashion. Amylopectin, on the other hand, is a branched structure. It also has alpha-1,4 glycosidic bonds in its main chains, but it also contains alpha-1,6 glycosidic bonds at branching points. These branch points create a more complex, tree-like structure.

The ratio of amylose to amylopectin varies depending on the source of the starch, influencing its texture, solubility, and digestibility. For example, starches with a higher amylose content tend to form gels that are less sticky and more brittle, while those with more amylopectin are often softer and more cohesive. This structural difference is crucial in food science, where starches are used as thickeners, binders, and texturizers. In biological contexts, starch serves as an energy storage molecule in plants, and its breakdown into glucose chains is a vital process for providing energy.
