Suolaisuus

Suolaisuus (Finnish for saltiness) is the sensory property of salty taste in foods. The term is formed from suola 'salt' and the abstract-noun suffix -isuus. In culinary use, suolaisuus describes the intensity of the salty taste perceived by the gustatory system.

Perception of saltiness is mediated by taste receptors in the mouth; salt ions activate ion channels that convey signals to the brain. Saltiness interacts with other tastes and with the food matrix, temperature, and moisture, which can enhance or mask the sensation.

In cooking and food production, suolaisuus is a key factor in flavor balance and preservation. It is adjusted by adding salt, curing, brining, or fermentation. Typical sources include salted fish and meats, cheese, pickled vegetables, sauces, and snacks.
