This culinary technique involves encasing food, typically fish or vegetables, in a thick layer of coarse salt before baking. The salt acts as a natural oven, creating a humid and evenly heated environment. This method is known for preserving the moisture and natural flavors of the ingredients, resulting in exceptionally tender and succulent results.

The process begins by thoroughly coating the food item, often a whole fish like salmon or sea bass, or root vegetables, with a substantial amount of coarse sea salt, sometimes mixed with egg whites to form a firmer crust.
