Propionihappobakteerit are a group of bacteria belonging to the genus Propionibacterium. These microorganisms are Gram-positive and anaerobic or facultative anaerobic, meaning they can survive with or without oxygen. They are known for their ability to ferment propionic acid, a process that yields propionic acid, acetic acid, and carbon dioxide. Some species of Propionibacterium, such as Propionibacterium freudenreichii, are commonly found in dairy products, particularly in Swiss-type cheeses like Emmental. In these cheeses, their fermentation activity contributes to the characteristic flavor and the formation of "eyes" or holes. This is due to the carbon dioxide produced during the fermentation process.

Other species, like Propionibacterium acnes, are part of the normal human skin flora. While generally harmless and even potentially beneficial by competing with more pathogenic bacteria, under certain conditions, they can be associated with skin conditions such as acne.
