Pahkasohja
Pahkasohja is a traditional Finnish dish originating from the Kainuu region. Its name translates roughly to "birch bark porridge," and it historically utilized the inner bark of birch trees as a survival food during times of scarcity. The process involved scraping the soft, inner layer of birch bark, which was then dried, ground into a flour, and mixed with water or milk to create a porridge-like consistency. Often, it was seasoned with salt, and sometimes with berries or other foraged ingredients to improve its flavor and nutritional value.
