Monoatsüülglütseroolide
Monoatsüülglütseroolid, also known as monoglycerides, are a class of lipids derived from glycerol and a single fatty acid. They are a type of acylglycerol, distinguished by having one ester linkage between glycerol and a fatty acid. The remaining two hydroxyl groups of the glycerol molecule are typically free or esterified with other molecules. Monoatsüülglütseroolid occur naturally in small amounts in animal and vegetable fats, and they are also produced commercially through the esterification of glycerol with fatty acids or the transesterification of triglycerides.
These compounds are amphipathic, meaning they possess both hydrophilic (water-attracting) and lipophilic (fat-attracting) properties. This dual
