Mellanlåg is a Swedish term that literally translates to "middle lid" or "intermediate cover." It refers to a specific type of baking tin or mold used in Swedish baking, particularly for cakes and pastries. These tins are characterized by having a central tube or column running through the middle, which aids in even heat distribution during baking. This design allows for a more uniformly cooked cake, preventing the center from remaining doughy while the edges burn.
