Mallassokeri

Mallassokeri, also known as "soft brown sugar" or "demerara sugar," is a type of unrefined sugar that retains some of its molasses content, giving it a distinct flavor and texture. It is commonly used in baking, cooking, and beverages, particularly in recipes where a subtle molasses taste is desired. Unlike white granulated sugar, mallassokeri has a coarser, less uniform grain size and a light amber color, which makes it visually appealing in dishes like desserts and sauces.

The production of mallassokeri involves minimal processing compared to refined sugars. After the initial crystallization of sugar cane juice, the remaining molasses is separated, but a small amount is left in to preserve the natural flavor and color. This process results in a sugar that is less sweet than white sugar due to the presence of molasses, which also contributes to its caramel-like notes.
