Kysteiinitähteen

Kysteiinitähteen refers to a Finnish dessert made primarily from cooked rice and egg whites, often sweetened. The name itself translates to "cysteine star," a peculiar descriptor that has led to various interpretations. Some believe it refers to the texture of the cooked rice, which can become somewhat granular and star-like when overcooked, while others suggest a more symbolic or even historical origin tied to the ingredients or preparation methods.

The dessert is typically prepared by cooking rice until it is very soft and mushy. Separately, egg whites are beaten into stiff peaks and then folded into the cooked rice along with a sweetener, such as sugar, and sometimes vanilla or other flavorings. The mixture is then usually baked or steamed until set, creating a light and airy pudding-like consistency.
