The name originates from the Finnish word “kuivumis,” meaning drying, and the English word “honeytime,” which marketers use to denote the period during which honey is processed. The concept was first introduced by the Finnish research institute Teknologinen Keskus in the early 2000s as a way to reduce moisture in honey without compromising its natural enzymatic profile.

In practise, the Kuivumishoneytime technique employs vacuum chambers and infrared heating to lower the water content of honey from about 17 percent to below 6 percent. By doing so, producers can reduce crystallisation risks and extend the product’s marketable shelf‑life. The process also concentrates certain aromatic compounds, giving the finished product a richer, more complex flavor profile.
