Kopikvaliteten

Kopikvaliteten, literally “coffee quality,” is a Swedish term that refers to the assessment and classification of coffee beans with regard to their sensory attributes, physical characteristics and origin. The concept has been used in Sweden and the surrounding Nordic countries for several decades, most prominently by the National Coffee Association and by private coffee roasters that aim to differentiate their products in a competitive market.

The primary criteria for evaluating Kopikvaliteten are aroma, flavor, body, acidity, aftertaste and defect levels. Apples, cherries, and floral notes are sought in medium to high grades, while unwanted flavors such as stale, musty or moldy tones indicate lower grades. Swedens “MyTasting” system, a standardized tasting protocol, allows roasters and consumers to align expectations about coffee quality. In addition to sensory testing, technical analyses of bean density, moisture content and defect rate are standard. The Swedish government has occasionally issued guidelines for coffee importers to ensure that beans meet minimum quality thresholds before entering the domestic market.

Since the early 1990s, Kopikvaliteten has evolved with a growing emphasis on traceability and sustainability. Many quality‑attracted roasters partner directly with farms in Latin America and Africa, applying the quality criteria to certify “premium” versus “specialty” beans. In recent years, Kopikvaliteten has also been adapted to the niche of cold brew and instant coffee, with new descriptors for smoothness and melt‑in‑mouth. The term continues to be widely used in industry reports, trade publications and in academic studies on the economics of coffee quality within the Nordic region.
