Kaasutuotantoa refers to the process of producing cheese. It involves the transformation of milk, typically from cows, goats, or sheep, into a solid food product through the action of enzymes and other microorganisms. The production of cheese can be broadly categorized into four stages: milk preparation, acidification, coagulation, and aging.

Milk preparation involves cleaning and sanitizing the milk, as well as adding any required bacteria or enzymes. The milk is then heated to a specific temperature to ensure that the bacteria can grow and the cheese can be produced. Acidification is the process of adding acidic ingredients, such as vinegar or lemon juice, to the milk to lower its pH and create an environment that is conducive to the growth of cheese cultures. The acidic conditions cause the milk to coagulate, forming curds.

The coagulation process involves the addition of rennet, a natural enzyme that helps to break down the fat molecules in the milk and cause the curds to firm up. The curds are then cut and separated from the whey, which is the liquid portion of the milk. The curds are then shaped into their final form and placed in a controlled environment, such as a cheese cave or a refrigerator, to age. During this stage, the cheese is allowed to develop its characteristic flavors and textures. The length of time that the cheese is aged can vary greatly depending on the type of cheese being produced, ranging from a few weeks to several years.
