Höyrystymislämpötilaan, often translated as boiling point, refers to the temperature at which a substance in a liquid state transitions into a gaseous state at a given pressure. This transition occurs when the vapor pressure of the liquid equals the external pressure surrounding it. At the boiling point, the addition of heat energy causes the liquid molecules to gain enough kinetic energy to overcome the intermolecular forces holding them together in the liquid phase and escape into the gaseous phase.

The boiling point of a substance is a characteristic physical property and is dependent on the ambient pressure. For example, water boils at 100 degrees Celsius (212 degrees Fahrenheit) at standard atmospheric pressure (1 atmosphere). However, at lower pressures, such as at high altitudes, water boils at a lower temperature. Conversely, under higher pressures, the boiling point increases. This phenomenon is utilized in pressure cookers, where increased pressure raises the boiling point of water, allowing food to cook faster.

Different substances have different boiling points due to variations in their molecular structure and the strength of intermolecular forces. Substances with strong intermolecular forces, like ionic compounds, generally have very high boiling points, while those with weak forces, like nonpolar molecules, have lower boiling points. The boiling point is a critical parameter in various scientific and industrial processes, including distillation, separation, and chemical synthesis.
