Glukoskedjor, also known as glucose chains or glucose polymers, are complex carbohydrates formed by the polymerization of glucose molecules. These molecules are essential components of the cell walls of plants and are a significant source of dietary fiber. Glukoskedjor are classified into two main types: amylose and amylopectin. Amylose is a linear polymer of glucose units linked by alpha-1,4 glycosidic bonds, while amylopectin is a highly branched polymer with alpha-1,4 and alpha-1,6 glycosidic bonds. The ratio of amylose to amylopectin varies among different starches, with some starches being almost entirely amylose and others being almost entirely amylopectin.
