Geuzes

Geuzes is a style of lambic beer brewed in Belgium. Lambic is a spontaneously fermented beer brewed in the Pajottenland region of Belgium and the city of Brussels. Geuze is a blend of young (one-year-old) and old (two or three-year-old) lambics, which are then refermented in the bottle, creating a naturally carbonated, complex, and sour beer.

The spontaneous fermentation process is a key characteristic of lambic and geuze. Instead of a cultivated yeast strain, wild yeasts and bacteria present in the brewery's environment, particularly in the coolship (a large, shallow pan where the wort is cooled), initiate the fermentation. This process is highly dependent on the local microflora.

The blending of different aged lambics is crucial to creating geuze. The young lambic provides fresh fruitiness and fermentable sugars, while the older lambic contributes depth, complexity, and the characteristic sourness. This blend is then bottled and allowed to condition for months or even years. During this second fermentation, the sugars from the young lambic are consumed by the remaining yeast and bacteria, producing carbonation and further developing the beer's flavor profile.

Geuze is known for its intricate flavor, often described as tart, acidic, and vinous, with notes of citrus, apple, hay, and even barnyard or horse blanket. It is typically highly carbonated and has a dry finish. It is traditionally served in a champagne-style bottle and can be enjoyed as an aperitif or paired with a variety of foods. Varieties of geuze exist, including Oude Geuze, which is made solely from lambics that have been spontaneously fermented and aged for at least three years, and often does not have any added sugar or sweeteners.
