Emulsioihin
Emulsioihin is a Finnish term referring to emulsions, which are mixtures of two or more liquids that are normally immiscible. These liquids are dispersed in one another in the form of droplets. Typically, one liquid is oil and the other is water. For an emulsion to form and remain stable, an emulsifying agent, also known as an emulsifier, is usually required. Emulsifiers are substances that have both hydrophilic (water-attracting) and lipophilic (oil-attracting) properties, allowing them to reduce the interfacial tension between the two liquids and form a stable interface around the dispersed droplets.
Emulsions are classified based on which liquid is dispersed and which is the continuous phase. An oil-in-water
