Emulgoija
Emulgoija is a term used to describe a substance that helps to form and stabilize an emulsion. An emulsion is a mixture of two or more liquids that are normally immiscible, meaning they do not mix. Common examples of emulsions include milk, mayonnaise, and vinaigrette dressing.
Emulgoijas, also known as emulsifiers, work by reducing the surface tension between the two immiscible liquids.
There are many different types of emulgoijas, both natural and synthetic. Lecithin, found in egg yolks and
