Emulgatör

Emulgatör, also known as an emulsifier, is a substance that stabilizes an emulsion. An emulsion is a mixture of two or more liquids that are normally immiscible, such as oil and water. Emulsifiers work by reducing the interfacial tension between the two liquids. They have a hydrophilic (water-loving) head and a hydrophobic (oil-loving) tail. The hydrophilic head dissolves in water, while the hydrophobic tail dissolves in oil. This allows the emulsifier to form a bridge between the two liquids, preventing them from separating.
