E220

E220 is the food additive code for sulfur dioxide (SO2). It is used as a preservative and antioxidant in foods and beverages to inhibit microbial growth and slow browning and oxidation.

Common applications include dried fruits (such as raisins and apricots), wines and fruit juices, fruit concentrates, canned vegetables, and some bakery products.

Sulfur dioxide can be added directly or derived from sulfites that release SO2 in solution, such as metabisulfites and bisulfites.

In the European Union, E220 is permitted in specified product categories at maximum levels defined by law; labeling is required when total sulfite content exceeds 10 mg/kg or L.

Some people, notably sulfite-sensitive individuals and people with asthma, may experience adverse reactions; EFSA and other authorities assess sulfites' safety and set guidance. Exposure through normal diets is usually within safe limits when used as directed.
