Desproteinización

Desproteinización is a process used to remove proteins from a sample or solution. This separation technique is valuable in various scientific and industrial applications, particularly in biochemistry and food processing. The primary goal of desproteinización is to isolate or purify other components of interest, such as nucleic acids, lipids, or carbohydrates, by eliminating the interfering presence of proteins.

Several methods exist for desproteinización, each relying on different principles to denature or precipitate proteins. Acid precipitation is a common technique where the addition of acids like trichloroacetic acid (TCA) or perchloric acid causes proteins to unfold and aggregate, making them insoluble and thus separable by centrifugation or filtration. Organic solvents such as ethanol or methanol can also be used to denature proteins and reduce their solubility. Another approach involves using high salt concentrations, which can disrupt the hydration shells of proteins and lead to their precipitation. Enzyme-based methods, though less common for general desproteinización, might involve proteases to break down proteins into smaller peptides.
