Dehydreringsprocess, or dehydration process, denotes the removal of water from a substance or system. In chemistry, a dehydration reaction is a chemical process in which a water molecule is eliminated from reactants, frequently resulting in the formation of a double bond or a new ring. Industrial dehydration covers the removal of water from liquids, gases, or mixtures to meet specifications or enable further processing.

In organic chemistry, common dehydration reactions include the elimination of water from alcohols to form alkenes, such as ethanol to ethene under acid catalysis, and the condensation of alcohols to form ethers with water as a byproduct. Dehydration can be catalyzed by acids, alumina, or other dehydrating agents. In gas streams, dehydration removes water to prevent corrosion and hydrate formation, using desiccants or glycol-based systems.

Physical drying methods remove moisture by phase change or adsorption. Techniques include air or sun drying, heat-assisted drying, spray drying, freeze drying (lyophilization), and vacuum drying. Industrial dehydration of natural gas often employs glycol dehydration or solid desiccants; food technology uses drying to reduce water activity and extend shelf life.

Applications span chemical synthesis, fuel production (such as anhydrous ethanol), food preservation, and moisture control in process streams. Safety considerations include handling corrosive dehydrating agents and avoiding unwanted reactions with water. Environmental aspects involve energy use and waste streams associated with drying agents and condensates.
