This technique separates components of a liquid mixture based on their boiling points. In the context of alcohol, it exploits the difference in boiling points between ethanol (alcohol) and water. Ethanol boils at approximately 78.37 degrees Celsius, while water boils at 100 degrees Celsius.

The process typically begins with a fermented liquid, such as beer, wine, or mash, which contains a relatively low concentration of alcohol. This liquid is heated in a still. As the temperature rises, the ethanol, being more volatile, evaporates before the water. The vapor, enriched in ethanol, rises and is then cooled in a condenser. This cooling causes the vapor to return to a liquid state, resulting in a distillate with a higher alcohol concentration than the original fermented liquid.

This process can be repeated multiple times to further increase the alcohol content, yielding spirits like vodka, whiskey, rum, and gin. The specific design of the still and the number of distillation cycles can influence the final product's strength and flavor profile, as other volatile compounds present in the fermented liquid are also concentrated to varying degrees during distillation.
