Alapízeket, often translated as "basic flavors" or "fundamental tastes," refers to the core sensory experiences that can be detected by the human tongue. Traditionally, these have been identified as sweet, sour, salty, and bitter. Each of these tastes is triggered by distinct chemical compounds interacting with specific taste receptors on the taste buds. Sweetness is typically associated with sugars, providing an energy-rich food source. Sourness signals the presence of acids and can indicate spoilage or unripe food. Saltiness is crucial for maintaining electrolyte balance and is detected by sodium ions. Bitterness often serves as a warning system for potentially toxic substances, as many poisons are bitter.
More recently, a fifth basic taste, umami, has gained widespread recognition. Umami, often described as savory
