Öljyssävedessäemulsiot, often referred to as oil-in-water (O/W) emulsions, are mixtures where small droplets of oil are dispersed in a continuous water phase. These are common in many everyday products and industrial processes. The stability of such emulsions is crucial, and it is often achieved through the use of emulsifying agents. These agents, also known as emulsifiers, are typically amphiphilic molecules, meaning they have both a hydrophilic (water-attracting) and a lipophilic (oil-attracting) part. The lipophilic part dissolves in the oil droplets, while the hydrophilic part extends into the surrounding water, forming a barrier that prevents the oil droplets from coalescing.

Common examples of O/W emulsions include milk, where fat droplets are dispersed in water, and mayonnaise, which is made by dispersing oil in egg yolk and vinegar. In cosmetics, many lotions and creams are O/W emulsions, providing moisturizing and lubricating properties. Industrially, O/W emulsions are used in metalworking fluids for cooling and lubrication, as well as in the food industry for products like salad dressings and ice cream. The formation of stable O/W emulsions typically involves energy input, such as stirring or homogenization, to break down the oil phase into small, uniformly dispersed droplets. The type and concentration of the emulsifier, along with processing conditions, significantly influence the emulsion's stability, droplet size, and overall characteristics.
