Ülejahutussuvandid refer to instances where a liquid is cooled below its freezing point without solidifying. This state, known as supercooled liquid, is metastable and will freeze rapidly if disturbed. The phenomenon occurs when a liquid is cooled slowly and without impurities or nucleation sites that would trigger crystallization.

The process of supercooling is possible because for a liquid to freeze, the formation of a stable crystal lattice must occur. This typically requires overcoming an energy barrier, which is often facilitated by the presence of seed crystals or imperfections in the container. When these are absent, the liquid molecules can remain in a disordered state even below their normal freezing point.

Supercooling is a common demonstration in physics and chemistry. Water, for instance, can be easily supercooled in a clean container. Adding a small ice crystal, a sharp tap, or even just introducing an impurity can instantly trigger crystallization, causing the entire volume to freeze. This rapid freezing is often exothermic, releasing heat.

The principle of supercooling has potential applications in various fields. In meteorology, it plays a role in the formation of ice crystals in clouds, which is crucial for precipitation. In some industrial processes, controlled supercooling can be used to achieve specific material properties. However, uncontrolled supercooling can lead to challenges, such as the sudden freezing of pipelines or the spontaneous solidification of beverages. Understanding and controlling supercooling is therefore important for both scientific study and practical applications.
