Yfirborðsefna is the Icelandic word for surfactant. Surfactants are compounds that lower the surface tension (or interfacial tension) between two liquids, between a gas and a liquid, or between a liquid and a solid. This is typically achieved by having molecules with both hydrophobic (water-repelling) and hydrophilic (water-attracting) parts. These dual properties allow surfactants to accumulate at interfaces and reduce the energy required to create or maintain those interfaces.

The structure of a surfactant molecule is often described as a "head" and a "tail." The hydrophilic head interacts favorably with water or other polar solvents, while the hydrophobic tail avoids water and tends to associate with nonpolar substances like oils or fats. This amphipathic nature is key to their function. When placed in a liquid like water, surfactant molecules will arrange themselves to minimize contact between their hydrophobic tails and the water. They might form a monolayer at the surface of the liquid, with tails pointing outwards, or in higher concentrations, they can form micelles, which are spherical structures where the hydrophobic tails cluster in the center, shielded from the water by the hydrophilic heads.

Surfactants have a wide range of applications. They are essential components in detergents and soaps, where they help to lift and emulsify grease and dirt. In the food industry, they are used as emulsifiers to blend oil and water-based ingredients, improving texture and stability. They are also found in cosmetics, paints, pharmaceuticals, and many industrial processes, including oil recovery and the production of polymers. The specific properties and effectiveness of a surfactant depend on the precise chemical structure of its hydrophilic and hydrophobic groups.
