A vinifier is a term used in the wine industry with two related meanings. In common usage, a vinifier is a winemaker—the person who oversees the production of wine from grapes, including grape selection, fermentation, aging, blending, and bottling. In technical contexts, the term can also refer to equipment or installations used in the winemaking process, particularly fermentation vessels and related processing gear.

As a person, the vinifier is responsible for translating grape material into wine. Core duties include choosing grape varieties and vineyard lots, managing fermentation by controlling temperature and yeast activity, regulating maceration and extraction, preventing faults, performing racking and clarification, deciding on aging regimens, blending, and ensuring compliance with labeling and quality standards.

Equipment and process-wise, vinification typically begins with crushing and pressing to extract juice, followed by fermentation in vessels such as stainless steel tanks, oak casks, cement vessels, or clay amphorae. Temperature control and sanitation are crucial, as is yeast selection, which influences flavor and fermentation kinetics. After primary fermentation, malolactic fermentation may occur and the wine undergoes stabilization, filtration, aging, blending, and bottling preparation.

Modern practice sees a range of approaches tailored to wine style, including the use of inert environments and controlled-temperature fermentation, as well as experimentation with alternative vessels. Small producers may employ microvinification or contract vinification services. The term appears in winemaking literature and education as well as in production settings.
