Suhkrustamise refers to a method of preserving or fermenting sugar beets, typically by extracting the cane is not used but rather sugar beets or other root vegetables to utilize the cell juice that contains sucrose within the cell. This liquid is then forced out of the cell by applying a solution, usually a watery syrup, to the entire volume of beets. The cells break and are rased for the extraction. The liquid from the cell is the sugar, which is eaten by bacteria, a staple in many processes. The bacteria eating the liquid drips down into a stratum, sort of, additional layers deep in a heap/separate pool.
