Stilbenes are a class of polyphenolic compounds characterized by two phenyl rings joined by a carbon–carbon double bond. The stilbene core is found in natural products such as resveratrol, piceatannol, pinosylvin, and pterostilbene. Stilbenin-specific effects can arise in enzymatic systems, chemical reagents, or analytical tools that interact specifically with the stilbene scaffold.

In enzymology, stilbenin-specific activity refers to enzymes or catalytic systems that preferentially modify stilbene substrates over other phenolics.
