Nonmiscibility refers to the property of two or more substances that do not mix to form a homogeneous solution. When nonmiscible substances are combined, they tend to separate into distinct phases. This is in contrast to miscible substances, which readily dissolve in each other to form a single, uniform phase.

The behavior of nonmiscible substances is governed by intermolecular forces. For two liquids to be miscible, the attractive forces between molecules of the different substances must be comparable to the attractive forces between molecules of the same substance. If the intermolecular forces are significantly different, the substances will tend to remain separate. For example, oil and water are nonmiscible because the polar water molecules are strongly attracted to each other, while the nonpolar oil molecules are also attracted to each other, but the attraction between oil and water molecules is weak.

Common examples of nonmiscible pairs include oil and water, oil and vinegar, and mercury and most common liquids. In mixtures of nonmiscible substances, one substance will typically form droplets dispersed within the other, a phenomenon known as dispersion or emulsification. The degree of separation and the stability of the dispersion depend on factors such as surface tension, density differences, and the presence of emulsifying agents.
