Mjölksyror, scientifically known as lactic acid, are organic acids with the chemical formula C3H6O3. They are naturally produced in the body, particularly during periods of strenuous physical activity when oxygen supply to muscles is limited. This process, called anaerobic glycolysis, converts glucose into lactic acid. Lactic acid is also found in various food products, often as a result of fermentation. Bacteria, such as Lactobacillus species, convert sugars into lactic acid in a process used to make yogurt, sauerkraut, and pickles. In these foods, lactic acid contributes to their characteristic sour taste and acts as a natural preservative. Beyond food and muscle metabolism, lactic acid has applications in the chemical and pharmaceutical industries. It is used in cosmetics for its exfoliating properties and in some medical treatments. While often associated with muscle fatigue, lactic acid is a normal metabolic byproduct and is continuously cleared from the bloodstream.
