Laktózhasznosítás, also known as lactose utilization, refers to the biological process by which organisms break down and metabolize lactose, a disaccharide sugar found in milk. This process is primarily carried out by the enzyme lactase, also called beta-galactosidase. Lactase hydrolyzes lactose into its constituent monosaccharides, glucose and galactose, which can then be absorbed and used as energy sources by the organism.
In many mammals, including humans, the production of lactase is high in infancy to digest breast milk.
Microorganisms, such as bacteria found in yogurt and cheese production, are also crucial in lactose utilization.
