glycerider

Glycerider is not a standard term in chemistry. It is sometimes used informally or as a misspelling for glyceride, which refers to esters derived from glycerol and fatty acids. In formal terms, glycerides are esters of glycerol (propane-1,2,3-triol) with fatty acids and are classified by the number of fatty acid groups attached: mono-, di-, and triglycerides.

Structure and classification. Glycerides consist of a glycerol backbone in which one, two, or three hydroxyl groups are esterified with fatty acids. Mono- and di-glycerides contain one or two fatty acid chains, respectively, while triglycerides have three fatty acid chains. The fatty acids can vary in chain length and degree of unsaturation, producing a wide range of physical and chemical properties.

Occurrence and metabolism. Triglycerides are the main form of energy storage in animals and plants and are abundant in fats and oils. They are commonly found in dietary fats and are absorbed and processed in the digestive system through lipolysis and subsequent metabolic pathways. Mono- and diglycerides can occur as digestion intermediates and also as components in processed foods, where they act as emulsifiers.

Production, uses, and processing. Glycerides are produced industrially by esterifying glycerol with fatty acids or through transesterification of fats and oils. They have broad applications: triglycerides serve as edible fats and oils; mono- and diglycerides function as emulsifiers in food products; glycerides are also used in cosmetics, soaps (via saponification), and lubricants. Biodiesel is produced by transesterifying triglycerides with alcohols to form fatty acid esters.

Safety and environment. Glycerides are generally considered safe for their common uses in food and consumer products. They are biodegradable and, as with other lipids, can influence environmental fate depending on form and exposure.
