Emülsiyonu refers to an emulsion, which is a mixture of two or more immiscible liquids where one liquid is dispersed in the other as tiny droplets. Typically, one of the liquids is oil and the other is water, and they do not naturally mix. Without an emulsifying agent, oil and water would quickly separate.

Emulsifying agents, also known as emulsifiers, are substances that help to stabilize emulsions. They work by reducing the interfacial tension between the two liquids. Emulsifiers have a hydrophilic (water-attracting) part and a lipophilic (oil-attracting) part. This dual nature allows them to surround the dispersed droplets, preventing them from coalescing and separating. There are two main types of emulsions: oil-in-water (O/W) and water-in-oil (W/O). In an O/W emulsion, oil droplets are dispersed in a continuous water phase, such as in milk or mayonnaise. In a W/O emulsion, water droplets are dispersed in a continuous oil phase, like in butter or margarine. The type of emulsion formed often depends on the nature of the emulsifier used and the ratio of the liquids.

They are found in food products (mayonnaise, salad dressings, ice cream), cosmetics (lotions, creams), pharmaceuticals (ointments, liquid medications), and in industrial processes like lubrication and paint manufacturing.
