Destilleerimiseks, the Estonian word for distillation, refers to a separation process that utilizes the difference in boiling points of components in a liquid mixture. This technique is widely employed in various industries, including the production of alcoholic beverages, refining of petroleum, and purification of water. The fundamental principle involves heating the mixture to a temperature where the more volatile component vaporizes, then cooling the vapor to condense it back into a liquid in a separate container.

The apparatus used for distillation is known as a still. A simple still typically consists of a heating vessel, a vaporizing chamber, a condenser, and a receiving vessel. As the liquid mixture is heated, the component with the lowest boiling point evaporates first. The vapor rises and travels into the condenser, where it is cooled, usually by circulating cold water. This cooling causes the vapor to condense back into a liquid, which is then collected. The effectiveness of distillation in separating components depends on the difference in their boiling points; a larger difference leads to a purer distillate.

In the context of alcoholic beverage production, distillation is used to increase the alcohol concentration of a fermented liquid. For example, in the production of spirits like vodka or whiskey, the fermented mash is distilled to separate ethanol from water and other fermentation byproducts. Petroleum refining uses fractional distillation to separate crude oil into various fractions, such as gasoline, kerosene, and diesel fuel, each with different boiling point ranges. Water purification can also involve distillation to remove impurities, salts, and minerals, yielding highly pure water.
