Destilera is a term that can refer to a distillery, particularly in Spanish-speaking countries. A distillery is an establishment that produces alcoholic beverages through the process of distillation. Distillation is a method of separating components of a liquid mixture by selective boiling and condensation. This process is used to extract a high-purity alcohol from fermented mixtures.

The raw materials used in distilleries vary depending on the desired final product. Common ingredients include grains such as barley, corn, and wheat for whiskies; grapes for brandies and cognacs; agave for tequila and mezcal; and sugarcane for rum. These materials are first fermented, a biological process where yeast converts sugars into alcohol and carbon dioxide.

Following fermentation, the resulting liquid, often called the "wash" or "mash," is heated in a still. The alcohol, having a lower boiling point than water, vaporizes first. This vapor is then collected and cooled, causing it to condense back into a liquid with a higher alcohol concentration. This process can be repeated multiple times to achieve the desired strength and purity. After distillation, the spirit may be aged in barrels, blended, or bottled directly. The specific techniques and aging processes significantly influence the flavor profile and character of the final spirit.
