Destilación is a process used to separate components of a liquid mixture by selective boiling and condensation. It relies on the fact that different substances have different boiling points. The mixture is heated in a vessel, causing the component with the lowest boiling point to vaporize first. This vapor rises and is then cooled in a separate apparatus called a condenser, where it turns back into a liquid. The purified liquid, known as the distillate, is collected. The remaining liquid, with higher boiling point components, stays in the original vessel.

There are various types of distillation, each suited for different separation challenges. Simple distillation is effective when the boiling points of the components are significantly different. Fractional distillation is used when the boiling points are close, employing a fractionating column to provide a larger surface area for repeated vaporization and condensation cycles, leading to a better separation. Steam distillation is employed for temperature-sensitive compounds that might decompose at their boiling point, using steam to lower the boiling temperature. Vacuum distillation is used for substances that have very high boiling points or are unstable at atmospheric pressure, by reducing the pressure above the liquid.

Destilación has widespread applications across many industries. It is fundamental in the production of alcoholic beverages, where ethanol is separated from fermented mixtures. In the petroleum industry, crude oil is fractionally distilled to separate it into various fractions like gasoline, kerosene, and diesel fuel. It is also crucial in chemical manufacturing for purifying solvents and reactants, and in laboratories for obtaining pure substances. The process is essential for producing purified water, essential oils, and various pharmaceutical compounds.
