Amphipathic refers to molecules that possess both hydrophilic and hydrophobic properties. Hydrophilic, meaning "water-loving," describes parts of a molecule that are polar or charged and readily interact with water. Hydrophobic, meaning "water-fearing," describes parts of a molecule that are nonpolar and tend to avoid water, preferring to associate with other nonpolar substances.

These dual characteristics allow amphipathic molecules to play crucial roles in biological systems and in various industrial applications. In aqueous environments, amphipathic molecules often arrange themselves in specific ways to minimize the contact between their hydrophobic regions and water. Beyond biological membranes, amphipathic molecules are utilized as surfactants, emulsifiers, and detergents. Surfactants reduce the surface tension between liquids or between a liquid and a solid, enabling processes like cleaning and emulsification. Detergents, for instance, work by surrounding grease and oil (hydrophobic) with their hydrophobic tails, while their hydrophilic heads interact with water, allowing the dirt to be washed away. This property also makes them useful in pharmaceuticals for drug delivery and in food industries for stabilizing emulsions.
