Utkristalliseras is a term used in chemistry to describe the process by which a dissolved substance forms solid crystals and separates from a solution. It occurs when the solubility of the solute is exceeded or the solution becomes supersaturated, causing crystallization to proceed.

The process involves nucleation, where small crystal seeds form, followed by crystal growth as more solute molecules join the new lattice. Nucleation can be homogeneous (occurring without surfaces) or heterogeneous (on impurities or container walls). The rate and outcome depend on factors such as temperature, solvent choice, concentration, pH, presence of impurities, and whether the system is cooled slowly or shifted by evaporation.

Utkristallisering is widely used as a purification method, often described as recrystallization. By dissolving a substance in an appropriate solvent and then carefully removing solvent or adjusting temperature, pure crystals can be obtained while impurities remain in solution or form separate phases. The quality and size of crystals, as well as the yield, are influenced by process parameters such as cooling rate, stirring, and seeding.

In industrial and pharmaceutical contexts, controlled utkristallisering helps achieve desired crystal forms and purity. Different crystal structures (polymorphs) may have distinct properties, which can impact solubility, stability, and bioavailability. While useful, the process can also lead to issues like incomplete crystallization or inclusions if impurities are not managed.

Common examples include crystallization of sugars from syrup, salts from aqueous solutions, and organic compounds during purification steps.
