Tärkkelyksen

Tärkkelyksen is the genitive singular form of the Finnish noun tärkkelys, which means starch. In Finnish grammar, tärkkelyksen is used to express possession or relation to starch, for example in phrases like tärkkelyksen koostumus ("the composition of starch") or tärkkelyksen lähde ("the source of starch").

Starch is a carbohydrate stored by plants as granules, primarily composed of amylose and amylopectin. It is found in seeds, tubers, and other storage organs, with major industrial and dietary sources including corn, potato, wheat, and cassava. In cooking and processing, starch absorbs water and gelatinizes when heated, typically between 60 and 80 degrees Celsius, contributing thickening, texture, and stability to foods.
