Temperiseerimisega is a Finnish term referring to the process of tempering chocolate. This involves carefully heating and cooling chocolate through specific temperature ranges to stabilize its cocoa butter crystals. Properly tempered chocolate has a smooth, glossy finish, a satisfying snap when broken, and melts evenly in the mouth. Conversely, untempered chocolate will appear dull, streaky, and may develop white streaks known as bloom.

The tempering process typically involves melting the chocolate to around 45-50 degrees Celsius (113-122 degrees Fahrenheit), then cooling it down to about 27-28 degrees Celsius (81-82 degrees Fahrenheit) while stirring. Finally, it's gently reheated to a working temperature of around 31-32 degrees Celsius (88-90 degrees Fahrenheit). This controlled crystallization results in stable beta V crystals, which give chocolate its desirable texture and appearance. There are several methods for tempering, including seeding, tabling, and using a tempering machine. Each method aims to achieve the same stable crystalline structure for the cocoa butter.
