Säilytysmuodot refer to the various methods used to preserve and store goods, particularly food, for extended periods. These methods aim to inhibit spoilage caused by microorganisms, enzymes, or chemical reactions. Common säilytysmuodot include refrigeration, freezing, drying, canning, salting, sugaring, and fermentation. Each method works by creating an environment that is unfavorable for the agents of spoilage.

Refrigeration, for instance, slows down the growth of most microorganisms and enzymatic activity by maintaining low temperatures. Freezing goes a step further, solidifying water within the food, which significantly inhibits microbial growth and enzymatic processes. Drying, or dehydration, removes moisture, making it difficult for microorganisms to survive and multiply. Canning involves sealing food in airtight containers and then heating them to kill existing microorganisms and enzymes, preventing recontamination. Salting and sugaring work by drawing out water through osmosis, creating a high-solute environment that is inhospitable to many microbes. Fermentation utilizes beneficial microorganisms to produce acids or alcohol, which act as natural preservatives and alter the food's flavor and texture.
