Sajtkészítéskor refers to the process of cheesemaking in Hungarian. It encompasses a wide range of techniques and traditions used to transform milk into cheese. The fundamental principle involves the coagulation of milk proteins, primarily casein, through the action of rennet or an acid. This separation of curds from whey is a crucial first step in most cheesemaking.

The type of milk used significantly influences the final product. Common sources include cow's milk, sheep's milk, and goat's milk, each imparting distinct flavors and textures. The fat content of the milk also plays a vital role. Following curdling, the curds are typically cut, stirred, and heated to expel more whey. The size of the curd cut and the temperature applied influence the moisture content and texture of the resulting cheese.

After draining the whey, the curds may be salted, either directly or by immersing the cheese in a brine solution. Salting aids in preservation, flavor development, and further moisture removal. Many cheeses also undergo a pressing stage to consolidate the curds and remove any remaining whey, shaping the final form of the cheese.

Aging, or ripening, is a critical phase for many cheeses. During this period, the cheese develops its characteristic flavor, aroma, and texture through enzymatic and microbial activity. The duration of aging can range from a few days for fresh cheeses to several years for aged varieties.
