Propansýra is a dairy product originating from the Swiss Alps. It is a firm, semi-hard cheese made from raw cow's milk, traditionally produced during the summer months when cows graze on alpine pastures. This diet of diverse herbs and grasses contributes to the unique flavor profile of propansýra, often described as nutty, slightly sweet, and aromatic. The cheese is aged for at least four months, and sometimes up to a year, in cool, humid cellars, which allows its characteristic rind to develop and its texture to become firm and slightly crumbly.
